Sometimes, it rises quickly after eating. Other times, it seems to stay stable at first, only to rise a few hours later.

Why? Because the amount of carbohydrates isn’t the only factor that affects blood sugar. In addition to the many factors that can influence blood sugar (e.g., physical activity, stress, sleep, and hormones), the composition of a meal also plays an important role.

Meal composition matters

Carbohydrate content isn’t the only factor that affects blood sugar. Other nutrients in a meal, such as protein and fat, can also affect how quickly blood sugar rises and how long the increase lasts. Here are a few things to keep in mind to better understand these effects:

Simple sugars: Foods high in simple sugars, such as juice, sugary drinks, sweetened cereals, and jam, are digested and absorbed quickly. They can therefore cause a rapid rise in blood sugar. For example, a breakfast consisting of sweetened cereal, white bread with jam, and orange juice contains carbohydrates that are quickly available to the body. Blood sugar may rise rapidly after this meal.

Fibre: Fibre is found in foods such as vegetables, fruits, legumes, and whole grains. It can slow down the digestion and absorption of carbohydrates, which may lead to a more gradual rise in blood sugar.

Fat: Fat can slow down digestion. After a high-fat meal (e.g., pizza or poutine), blood sugar may rise more slowly at first, then increase later and remain elevated for longer.

Protein: When consumed in large amounts, protein can contribute to a delayed rise in blood sugar, sometimes several hours after a meal. This effect can be particularly pronounced when protein is consumed with carbohydrates.

The same amount of carbohydrates, but a different effect on blood sugar

Imagine two meals that each contain 50 g of carbohydrates. If one consists mainly of carbohydrates that are digested quickly, while the other contains more fibre, fat, or protein, the impact on blood sugar can be very different.

Understanding these effects can help explain certain blood sugar rises and identify different ways to manage them.

What about insulin?

Regardless of what we eat, insulin acts on blood sugar in the same way. What changes is how food is digested and how glucose (sugar) enters the bloodstream. Depending on the composition of a meal, certain strategies, such as adjusting the insulin dose or timing of administration, may help better match insulin action to changes in blood sugar.

Before trying insulin-related strategies, it may also be worth experimenting with meal composition or the order in which foods are eaten (e.g., starting with vegetables and protein, then eating carbohydrates). For some people, these small changes may help make blood sugar patterns more predictable.

Want to learn more?

Would you like to learn more about strategies for adjusting insulin to different types of meals?

Log in to access the full content and find resources to better understand how different types of meals affect blood sugar, along with practical strategies to help manage these effects in everyday life.

If you live with type 1 diabetes, you may have noticed that your blood sugar doesn’t always respond the same way after a meal.
